Christmas Progressive Dinner

Just a reminder, this Thursday the 17th, is our Relief Society progressive dinner. Meet at Leiah's house at 6:00 p.m. Be sure to invite your visiting teaching sisters! Merry Christmas!

Breakfast Casserole

24 oz frozen potatoes of your choice
1/4 c melted butter
1/2 c jack cheese
1/2 c cheddar cheese
1 1/2 c cubed ham (preferably nitrate free)
1/2 t salt
6 eggs
1 c evaporated milk

Put potatoes in bottom of a 9x13 pan. Pour butter on the potatoes. Layer cheese and ham.

Bake at 425 for 25 mins.

Beat eggs, milk, and salt. Add to above. Bake at 350 for 20-25 min. longer.

Fluffy Wheat Pancakes

Whole Wheat Pancakes

1 ¼ c. whole wheat flour (i use white wheat)
¼ c. wheat germ
2 T. sugar
1 ½ tsp baking powder
½ tsp baking soda
1 tsp coarse salt
1 ½ c. low-fat buttermilk
¼ c. vegetable oil
2 large eggs, lightly beaten
Whisk together flour, wheat germ, sugar, baking powder, baking soda, and salt in a bowl. Whisk in buttermilk, oil and eggs. Let stand 10 minutes (if batter thickens, stir in 1 T. water).

Cook over medium heat. Spoon in 1 T. batter for each pancake (I use a little more than that). Cook until bubbles appear. Flip, and cook until golden brown, about 2 minutes. Keep warm in a 200° oven while you cook remaining batter.

Health Nut Club Pumpkin Pancakes

Pumpkin Pancakes
2 C wheat Flour (I use hard white wheat)
3 T. brown sugar
2 t. baking powder
1 t. baking soda
1 t. allspice
1 t. cinnamon
1/2 t. ground ginger
1/2 t. salt
1 1/2 C milk
1 C pumpkin puree
2 eggs
2 T oil
2 T vinegar
Mix together milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger, and salt.
Stir into pumpkin mixture just until combined. Add more milk if necessary. Cook on griddle.

Sisters,
In an effort to keep everyone updated on the various activities going on in the ward we are going to try using this blog. Hopefully it will serve useful as we update it with recipes, preparedness tips, and upcoming lessons and activities. This way if you loose your newsletter you'll know where to go for information.
